Sultana beef noodle stir-fry

- olive oil spray
- 500g rump steak, excess fat removed and cut in small chunks
- 1 1/2 tablespoons salt-reduced soy sauce
- 4 cups frozen mixed vegetables
- 1/2 cup sultanasgolden raisinsX
- 200g dried egg noodles

1 Heat a non-stick frying pan with oil spray. When hot add steak and fry in batches until cooked through. Add soy sauce, vegetables and sultanas and cook for 4-5 minutes until vegetables are tender.
2 Cook noodles following packet directions. Drain. Add to stir-fry and toss well to combine. Pile stir-fry in individual bowls to serve.
Garnish with fresh coriander.
